  What is chicory? Chicory, simply is a blue or lavender flower that is a bushy perennial herb that grows wild in North America. The roots are baked, ground, and used as a coffee additive, popular in the South, especially New Orleans. It is because of Mrs. B's fondness for chicory coffee - first tried at New Orleans' famous Cafe' du Monde - that ChicoryHollow.com got its name! Read more about chicory coffee here.

The chicory flower is considered by many literary historians to represent Romanticism's concept of the Blue Flower, symbolizing desire, love, and the metaphysical striving for the infinite and unreachable.
